Regarding Golden Age theatrical cartoons:

If Goofy cartoons are everyday situations made humorous Donald cartoons are about the humor of being incredibly unlucky, then what are Mickey cartoons generally about? Cause it seems like they just have him doing random things and succeeding at it.

Mickey is a regular guy doing regular guy things. That's not the same as Goofy though. Goofy tends to wear a lot of different hats in his cartoons.

Early Mickey was just a catalyst for showing off animation synced with sound. Most of the shorts up to 1930 were just Mickey banging on objects, playing instruments, tapping his toe to the music, or pulling on things to make a sound. They weren't really concerned with a basic three-act story until things like Pioneer Days or The Fire Fighters where Mickey has an actual conflict to face.

Mickey is the adult's inner child, Donald is the adult's desire to be rebellious and lash out against the world and Goofy is the adult adjusting to his role and finding joy in the smaller things in life.

Many of the Mickey cartoons that don't hand over the bulk of their runtime to other characters (and even some of the ones that do - see Happy Birthday Mickey) focus on music and/or his dancing.
