Because either George came in with a funny idea or some of the writers decided to fuck around. You see, before everything in existence was a miniseries, you had a lot of breathing room in a series and could do more experimental, episodic stuff and if it didn't work, then the audience would say "Oh well, I'll just warn people to skip those episodes"
