Something like the Plustek Opticbook 3800 would be good as it scans right up to the edge of the bed. I'm looking at a few for good prices on eBay UK right now.

Go to a university library they should have these machines with lights and scannes and a moveable plate to place the book on to neutralize back wobble. These machines were specifically designed for it and will scan it straight to s usb stick or to your unviersity email. Forgot what theyre called tho

thats why most people resort to unbinding the book instead.
your other option is to just press it on a flatbed scanner, but that will obviously leave artifacts and distortion from where the page bends into the spine
your best bet would rigging a little phone stand together and hoping theres a good app that can account for the distortion of the bent book pages.

Theres an app called Genius scan that will scan with your phones camera and make it black & white and skew things back to square to compensate for your camera angle. It's really nice. Probably time consuming but you know that.
