Would there be any reason why I couldn't just use Gym mat to make custom insulation trim for doors? Seems cheaper too, especially if I can just buy it at Ross or something or get an old one.
Do you mean using it around the gaps like a weather-strip?Could work, but cutting long strips evenly won't be easy.On the other hand if your door's gap size varies it might be better for getting it well fitted vs a conventional weatherstrip.You will need also a compatible glue or double-sided tape to attach it.

Arent gym mats expensive?
The amount of time you're going to put in to cutting up the gym mats and applying the adhesive doesn't make any sense when compared to how incredibly cheap adhesive-backed foam weatherstripping is.
