I have a cast iron boiler from 1975 which still produces heat but has had multiple problems in the last few years (mostly with components other than the boiler itself). I was quoted 3k to change the pump, valves, expansion tank, and a few other components, and 9k to change the whole boiler plus everything else that goes with it. Should I just bite the bullet and replace the whole thing?

Gas furnaces only cost $2500 delivered to your door ready to install from a wholesaler. Fuck HVAC niggers. Its not hard. Just Do It YOUR SELF.

$2500? Where TF are you ordering from
You can get a 96% efficient gas furnace from alpinehomeair for under $1000

watch some vids and find a boiler that you feel is good for your house, consider your square footage to BTU output so you size your system correctly. piping a boiler isnt that difficult if you take your time and read the installation manual. Google and youtube videos are your friend.
Are you on gas or oil? If youre on gas I would atleast leave the gas hookup to an HVAC company, that way if something fucks up its on them.

In terms of what you got quotes, 3k is absurdly expensive, it sounds like an expansion tank, a relief valve and a circulator pump. 3k is gnarly.

There's electrical, plumbing, and gas work involved with switching a boiler, and I don't have enough experience with any of those. Don't wanna blow my shit up. Also, it's getting cold out and I have a newborn, I don't wanna be left without heat for a week while I figure out how to do everything myself. Also, I already have two other big DIY projects started and don't have time/energy for a third
