I have a stripped gear on a Braun hand mixer. I have replacement gears but can't figure out how to pull the existing gears off. It's the central one that is stripped.

I would try a hair dryer or heat gun on the platic gears, get them toasty enough to expand a little, and yank.

Or a tiny tiny 3-jaw puller?

They’re either snap fit or melted onto knurled sections of the shaft. You could make a tiny crank puller but it’s probably easier to just destroy them with wire cutters.
Anyway for the crank puller take a piece of flat stock, drill 3 holes in a line, evenly spaced. Put bolts through outer holes with nuts on both sides. Those bolts should have wide heads which act as ‘pullers’. Tap a thread in the central hole and turn a bolt in.

Yeah, where the fuck is anyone getting replacement gears from on American products? American appliances are designed to fail and not have any replacement parts intentionally.
