I want to remove the grip from this knife to either refinish or replace it, but I'm not sure how to get it off. Is there some way to remove these fixtures cleanly, or will I just have to drill through them?

>>2891064remove the wood first, those are not salvageable and need replacement anyway. Then you'll be able to tell whether just clamping and using a punch will do the trick for those rivets or not. Various sizes of brass or stainless steel rods are available all over the place to replace them anyway.

>>2891064Try sanding and refinishing them first. If you are happy with the results you saved a bunch of time. If you hate it than remove the wood by prying it off or using a chisel to break it off. Than saw off half the rivet and press or hammer it out. Hammer it with a drift pin.
