The actual concern is calories, but processed foods tend to have a lot of them.
>>
>>74229776
That makes way more sense, but it doesn't explain the articles that say you should eat sourdough bread instead of white bread.
>>
>>74229776
Oh, and they also say that you should avoid diet soda, which doesn't contain any calories.

This is not even close to true.

Where in nature does Spam exist? Do you think our bodies evolved over millions of years to eat whatever the fuck spam is? It fills your tummy and has the macronutrients that you care to pay attention to, but literally nothing else (vitamins, fiber, etc). Processed food is not food. It’s unironically better to eat a fat steak from a grass fed cow for every meal than eating the slop that’s manufactured and squished into a can or fast food restaurant
>>
Typically food made from more than one processed food. Often the goal is shelf stability, transport, cost, palatability etc. We like them because they have been engineered to be yummy, but they are turning out to be worse for us than simple calories or macronutrients suggest. Why? Because they tend to displace real food and good habits in terms of food choices, calories and total spend. The more we sustain ourselves on manufactured stuff the worse our health outcomes as a society. Most western economies eat the majority of calories from them, the rates of consumption have been rising, the rates of obesity, cancer, metabolic disorders etc have been rising. These foods are engineered to specifications. They aren't diverse in terms of nutrients, pro or pre biotics. The modified fats cause inflammation, the industrial thickeners and emulsifiers cause leaky gut, the single source of fibre added back promotes only a couple of species of gut bacteria and weakens the miceobiome.
