I just graduated college and will be living on my own for the first time, what are some easy, healthy meals I can make for myself for breakfast and dinner if I have celiacs and can’t eat wheat? I’ve always just eaten what my parents made for my siblings and I or gotten stuff from the school cafeteria so I’ve never done this before.

Refried beans and corn tortillas, if you're okay with corn. Some people with celiacs can handle it, some can't. But it's a cheap meal and extremely filling. ~450 calories for a tortilla and a 16oz of beans (add some tbsp of taco sauce and/or salsa for flavor, maybe even some taco seasoning like they put in taco meat). Some beans in the tortilla, the rest on the side. Shit's like $1.25 per meal.
