I rest for five minutes between sets, that's usually long enough for me to type how many reps I did in my notes app

on a piece of paper. After I finish these workouts, I take a rest day, then I write my routine down for the next 3 days. it's worked well for me so far.

I use google sheets through phone app. Have all my lifts listed out for each session/week, just have to type in weight, sets and reps. Takes 10 seconds while resting between sets.
I usually work in eight week blocks, then one week off and one week of half volume. So each block is on a separate worksheet.

So you can continue to progressively overload, and identify if you are stalling on something. I guess if you have a good memory it's not necessary. I have a shit memory and forget what exactly I did the previous session half the time, so if i can't look back I'll just flounder.
