The point of lifting weights is to easily win a streetfight against 99.9% of other men out there. Sure you can't beat the pros, because you need MMA for that, but don't underestimate weightclasses. If you're 240lbs of mostly muscle and some fat and somebody else is 240lbs of mostly fat and some muscle, you've already won. Lighter guys you can just pick up and slam. Just don't live in America, or they'll shoot you, but bulking probably helps slow the bullet at least 3% or so.

Deadlifts are not a hamstring isolation. If you want big hamstrings you do basic bodybuilding exercises: RDLs, SLDLs, good mornings, hamstring curls, that sort of thing. Every good powerlifter does these things, just with an overall emphasis on the deadlift because that's their competition lift. No need to deadlift if you aren't competing on it.
