I usually make multiple portions for several days for practical reasons because it's fucking annoying trying to fit in cooking AND working out into an afternoon after wageslaving. But I do switch it up all the time, I have dozens of recipes and keep adding new stuff when I feel like it.
Counting calories is pretty trivial considering recipes are basically just stacking three legos named "protein", "carbs" and "flavor" on each other (four if you count random veggies), every dish is around 500-600 calories, protein fluctuations don't matter.

It's really very easy and nutritious to throw a bunch of shit in the instant pot, so that's what I do, which ends up being meat + starch + veggies.

Overtime you realize being autistic about calories is futile. You are not an olympic level body builder. Eating 190g of rice instead of 200g won't inhibit your gains. You probably have leakage you don't even know about.

You learn the bases, like 2 scoops of oats, 1 tbsp yoghurt, drizzle of honey, then you vary, moving past counting calories because there are other things in life to care about

Counting calories as a regular gym goer is retarded.

Pulling out a food scale when all you're doing is maintaining a mildly above average physique is dumb as fuck.

But if you're doing it for a show yeah, keep at it.

Otherwise eat balanced foods, don't shove stupid sugars in your gut, and exercise and you'll more than likely stay in shape and feel good anyway.

Breakfast for me is the same everyday. For lunch, I either have the extra portion of dinner I cooked the previous evening or one of a few meals. For dinner, I have a selection of around 20 recipes I rotate between. This way I have enough variety in my diet to fulfill my nutrional needs and not get bored but not so much that I have to worry about the macros and logistics of unfamiliar recipes
