Count calories, all of them.
Eat about 500-1000 less calories than your TDEE.
Buy scales, be accurate.
Learn to cook. Try to stick to lean protein and green vegetables.
Eat a lot of protein. 0.72g per pound of goal lean body mass.
Doing cardio, even just walking, will improve your health. There is no such thing as a healthy fat heart, but you can offset the risks.
Lifting weights will keep and gain muscle mass and lose fat much quicker. No lifting results in the body eating away muscle AND fat.
Drink more water.

I have recently discovered that I have fatty liver disease. Pretty shocking, but at the same time a blessing. I finally know why I always feel tired as fuck and just couldn't lose the covid weight for years.
Now I've been cutting out saturated fats and sugar entirely, as opposed to fruit and steakmaxxing like i did before.

And would you look at that. Eating only lean meat, whole grains, eggs and shit, I've finally started losing like 3 lbs per week. But to be fair, I'm heavily undereating frequently, it's just hard to eat a lot of calories like this, and eating becomes quite the chore.

Now I just gotta keep doing this and lose like 80lbs

about 240 pounds
at my heaviest last year I was 267, got down to 240 after 6 months of dieting, and have hovered around there since.
I want to get down to 200 this year but that seems like an unrealistic goal if this is how its going to start.

I was doing a lot better when logging calories more exactly but it's a real pain in social eating situations where food can't be accurately measured.

I'm drinking, on average, 2-3 liters of sparkling water (flavored) a day. Maybe a couple cups, no more than 32oz, of regular water as well.

This trends higher on workout days.

I've been in a three day slump, I need to get back into my workouts. I've been doing pushups via a deck of cards for pacing and fun, I started January at 150 in an hour. Now I trimmed that back to 150 in 45, and now 200 in about an hour.

I do slow tempo and my form has gotten much better so I no longer feel it in my wrists and shoulders as much now, if at all. Hope to work up to archer and one-armed pushups some day. I can knock out a set of 20 for diamonds so I'm hopeful the rest will come, in time.

How are you doing squats? Barbell? Bodyweight?
Knee pain will go away the more you lose and the more you work the joints/get used to the movement. That said, you're moving so much weight just being overweight/obese you should probably just start with bodyweight squats only to get used to form and getting comfortable with the movement. Once bodyweight squats get easy, move up to goblet squats. Once you can rip out goblet squats with a 50lb dumbbell easily then move up to barbell squatting and keep progressing with weight there.

I had horrendous knee pain to the point where going up stairs hurt and had the same thought of skipping working legs until I lost more weight, but I kept at it and the knee pain gradually went away.

Yep, that's why I included that last line as a warning. I did however maintain a very healthy weight for about five years before I started getting fat again. Bad sleep and stress and life circumstances will make you slip and before you know it you're back to the bad habits. I have since recovered from my slump and have lost 9kg, my biggest issue has been not biking regularly because a bunch of things kept intervening with it.
