I dunno what you mean by "regular earphones", earbuds that only rest loosely at the entrance of the ear canal? Bullet style IEMs? The former have the disadvantage of having no sub bass, with the latter the fundamental difference is only in how you wear the cable (straight down vs. over the ear).

The audio interface is basically a sound card, you're sending a digital signal over usb which is then converted in your audio interface to an analog signal which is sent over XLR to your speakers (or the other way around for a microphone or instrument going into your computer).
