Works fine for me in Bottles. There's plenty of documentation online on how to set it up. It's just a matter of installing the necessary font package, and in very few cases going to the settings of your wineprefix/bottle and changing the locale to JP. This is something you have to only do once and forget about it.

If you're asking if WINE will detect that you're installing a JP game and switch your locale and pull the necessary fonts, no. Windows doesn't do it so neither will WINE. Same with installing necessary dlls, if the installer doesn't do it for you (most didn't back then) then you'll have to do it yourself. In Bottles that's all under Bottles->Dependencies, and if you're using WINE raw then you'd use winetricks I think.

You have to do it manually but that sounds like you were just taking shots in the dark. Generally if you try to run the program through with "wine [insert program exe here]" and if fails the terminal will tell you why and sometimes it will literally just say "missing 123.dll" and then you just go into winetricks and download that .dll and you'll never have that problem again in that wineprefix. Most if not all errors that wine throws at you through terminal can be researched for a deeper understand.

With anything with linux the majority of it is not automated which means you'll have to learn how your system works and how the program works (or at least the part that is breaking or throwing errors). This means that you'll have to deal with frustrating troubleshooting that could take multiple hours, google searching solutions, having to deal with people who are dicks to you because you are new or don't know something; but if you stick with it you'll gain confidence and it gets easier.
If you're the kind of person that wants to play Japanese video games, do little to no troubleshooting, and really have no interest in computers outside of entertainment then I would honestly say buy an old desktop from that era and use that to play your VNs, or another solution.
