Just install a DE package and a WM and use the WM? There's no hard requirement that you need a DE for the programs. Usually you'll just have to start dbus or daemons but it's not too hard. I only upgraded my FX6300 to the aforementioned 3900x about a year and a half ago. That FX still plays Red Dead 2 and even ran Hell Let Loose at around 45fps. Gave it to my little brother and he's still running it.
The 3900x is such an unnecessary overkill for absolutely everything, I can't even imagine the use case for a 5900x or 7900x.
