Both of your phones know your location at all times even if you turn airplane mode on. Doubly so if you have GPS enabled, but location can still be retrieved with GPS off.

Your phone isn't listening. This phenomenon is a combination of different effects. One is confirmation bias. You are talking about lots of topics a day. If an ad eventually matches one of them, you are suddenly reminded of it. But you ignore all the topics you talked about you didn't see an ad for. Or all the ads that are unrelated to your recent experiences.
The other effect is that without directly listening, there is still a lot of data collection which you accepted. Most importantly location tracking. Advertisers know where you were. And the local coffe shop wanted its ads shown to people in the area. Hence also the poster.
