I have an old desktop that I repurposed into a home server. It has an i7-8700 with 32GB of ram. One of the things I use it for is to host a paperMC server on it with 12GB allocated to it. Even with 8 players online using elytras I've never seen the total system CPU usage exceed 30%. Any reasonably modern chip will fare just fine for game server hosting.
