Youtube now has ads embedded directly into the video format. I can't skip it, even with adblocker. How to bypass this?

Reinstall browser.

...Of course, none of that will do anything if you're signed into a google account.

You're part of the 'A' group of Googles A/B testing, not everyone is seeing that new "feature" yet so we don't really have any proper workarounds developed for it.

They're rolling it out to only some people. Its baked into the video so ublock doesnt work. It also fucks up sponsorblock since the time sets are offset by the ads.
