Also VNC server, but it's a bitch - need to connect over SSH, and the guy sharing must be reachable (so another tunnel to get him a public IP?)

installing ejabber was super easy, but that is jabber.. we need jitsi? not sure how they relate

what is the simplest server (on debian)?
