I recently found out that my family owned this old piece. I know the obvious answer is to root it and make it a Linux server, but I already have some old laptops running linux servers. Another idea I had was to flash a custom Android ROM, but I've heard from most anons that Lineage OS and other OSes are trash. Any suggestions?

No. Amazon's entire schtick with these is selling them cheap and giving you no way to make the hardware useful to you outside of their ecosystem. Only certain models have exploits, and those exploits are often fixed by Amazon before you can get around to discovering what they were.
