If I hang up on them will it indicate to the bot that my phone number is real and they will keep calling?

Should I just let it ring and not do anything?

I'm afraid to keep blocking and then eventually blocking a number that was used legitimately by someone else.

Sometimes if I answer I hear nothing and get hung up on immediately but then the amount of spam calls I get go through the roof after that

Depends on which you get.
Chinese robo calls? Just ignore them, eventually they think the number is disconnected.
Indians? Make fun of their accent and belittle them. Eventually they give up.

They help in my country (mexico). Only two or three calls that still went through me offering me shit I recorded them, asked a bunch of questions to get their information and then told them to fuck off never getting any data from me and telling them a huge fine would be in their way.
Sent that recorded call and details to the government. Never got a call again.
Obviously if you have a pending debt they can legally call you all they want, so don't be a nigger and pay your debts.

That certainly sounds like what I need. But it seems that automatic call screening is only available on Pixel phones I believe.

Currently have a Samsung Note 10+ and only features it has is caller Id, blocking numbers, and informing me if its suspected spam. Which helps but I hate having my phone ring 10 times a day to calls that are spam. I want to get rid of them entirely if possible.

Turn on Do not Disturb and there should be like an "Allow only calls from my contacts" annd I think you can refine it further to a specific list of people

I used to get 4-5 calls a day and one day it just stopped. I used pixel call screen. Check your credit report to make sure nothing's late or incorrectly added to your credit. I get pursued sometimes because my sister is a piece of shit.

Use the same system spammers use to send 100% of /pol/ posts to every congress critter. They will take interest and force tech companies to force authentication to set caller-ID. Anything else is whack-a-mole and artificially created companies to bandage the issue.
