If you generate something with GPT or Claude or whatever it'll probably catch at least part of it but you can work around that by just rewriting certain segments, at which point it will think a human wrote it. You can even rewrite an unrelated paragraph and it will think an untouched AI generated paragraph is also human made. It sometimes thinks human writing is AI, though, like you said. But even if there was an accurate detector for AI writing, it's unlikely the company will publicly reveal enough details about how the detector works for someone to make a truly neutral judgement.
