The projectors you're talking about end up costing way more than most TVs or other projectors. Ultra short throws require a special screen made just for them otherwise the image looks like shit. These screens will often times cost as much as the fucking projector.

I have, and while the TV cannot spy on you, smart TVs have way more problems than that. Being disconnected from the internet doesn't address the fact that smart TV OSes are absolute utter dogshit even from top-of-the-line brands like LG, Sony or Samsung. You will have a buggy experience. My current TV needs to be fucking rebooted every so often because the menus will get laggy then eventually stop working altogether if the TV has been on "too long". Another TV I had could not remember picture calibration settings across inputs. Don't get a fucking smart TV.

I have a Sony TV from 2018, it does the job but navigating any app is a down right pain at times.

these are the TVs Airports use for the displays or Mcdonalds for the menu these are made to run 24/7 usually have a internal fan so you can even run them upside down or behind protection glass without overheating. There dumb if you want smart functions you need to insert a computing module at the back which is available from intel with Win11 or as a raspberry pi.

the 55" version costs 1600$ so like what a 55" tv cost in 2012 or so. so that could be a price someone is willing to pay for a dumb tv.

probably just like any OS or Smartphone does nowadays.

a few weeks ago i read an article that newer TVs also create a hash of the sound and image displayed.
Lg does this every 3ms and sends it to LG servers. its then compared to a database with hashes of various sources and they know what you are watching even if you play something from a HDMI source.
this is then used to display personalized ads.

i have a ass old Samsung smart TV from 2012 i never noticed it shoving in additional ads when watching satellite TV or using it as a display. but i heard newer TVs doe that.

I bought a TCL QM750G, the OS is from Google, but is entirely usable (unobtrusively so) without internet.

However, that all went out the window when the wife connected it to the wifi while I was in my office so she could screen mirror/airplay that one Genshin game from her phone. Audio didn't even work in Airplay but I blame iOS.

you need to be careful with commercial displays, they can be quite unusual. i've talked to someone before trying to use one but didn't have the computer that went with it, since the computers are often something you install/insert into the display, and is intended to be the only thing the display displays anything from, the display may not have any exposed inputs. that is, no hdmi/displayport/vga/etc connectors you can simply plug another device into, and naturally they don't sell the computers for these cheap
so if you're looking at one, be sure you can actually use it without its' computer, or are willing to hack in an external input yourself
