Nowadays whenever I want to configure my os, I just ask some cli agent and shit just works.

1. There is no installation of another app, whether it thunderbird desktop or thunderbird mobile.
2. Locking you out of an account isn't a microsoft authenticator thing... it's just basic 2fa. Besides you don't need to add in your phone number, I use my gmail account for the 2fa for my live.com email. My hotmail has no secondary protection so I can log right in without 2fa.

Hey bro, I know it's frustrating on wanting to do one thing while the software or company wants to do another, but microsoft has made it difficult to log in with a simple username-password auth. I was also frustrated at them when they forced it on office suite outlook, making my password emails unable to connect (because logging in with their oauth 2.0 would log you into windows as well). In the end I switched to thunderbird to avoid that. I didn't avoid the oauth2.0, I just wanted to not log into windows when I log into an MS account so I get your conundrum. However logging into your MS email with their oauth2.0, especially with thunderbird, is a non-issue. It's literally a password login, and with 2fa if you set that up. It won't install another app, nor force you to, and it won't log you into Windows.
