A lot, the Greeks were actually most-famed in their days for being canvas painters. A lot of fresco and tile work from Antiquity were recreations of works that were originally painted on canvas. It's believed that basically all of this has been destroyed or simply rotted away.

29% of known authors are identifiable with complete surviving texts. Idk how this figure might compare to visual images, but probably at least three-quarters didn't survive the fall of Rome.

Nearly all art is lost within a few centuries due to perishable materials, fires, other accidents, botched restorations, et cetera. What you see today is just the tip of the iceberg.

Look at Pompeii and Herculaneum. These were bustling towns, but they were not that far out of the ordinary by the standards of Roman Italy (though certainly richer and more developed than non-Italian areas of the Roman Empire). Look at what has been found in those towns so far, realize that neither of those towns has been fully excavated yet, and remember that those two towns represented only a sliver of the Roman population at the time of their destruction. Pompeii had 20,000 inhabitants according to the high end of modern estimates, and Herculaneum only 5,000 or so, out of a total Italian population of between 7,000,000 and 14,000,000, and a total imperial population of over 80,000,000.

So whatever you have in Pompeii and Herculaneum, you have to multiply it by hundreds to find just the art from Roman Italy that was lost. Other areas may have had even more misfortune in that respect - we know the Germanic peoples made intricate, perhaps painted wood carvings for their carts, buildings and ornaments from the few surviving examples that were preserved in bogs and anaerobic soil, but due to the climate nearly all of those are gone. The same goes for practically all perishable materials used in Central America (like clothes, banners, writings not done on stone, wood, et cetera), where the jungle consumed basically everything except stone in record time, leaving only creepy ruins after a few centuries.

Then there's deliberate destruction for cultural, religious, economic or political reasons, which you find everywhere in the world, from Saudi Arabia to China and from Germany to Mexico. Material culture is far more fragile than people like to think.
