This medal here depicts a man being bitten in the hand by a wolf, which can be related to the Norse myth of Tyr having his hand ripped off by the wolf Fenrir as the wolf was being bound.

Yes. What you're doing right now is like arguing that all stories about the Trojan War or Oedipus were purely creations of the iron age. Heroic and cultural folklore was "recorded" in oral tradition by poets and priests in all IE culture long before anything was written down.

some of the recorded poetry was composed relatively late (I believe the Runatal and Ljothatal sections of Havamal post-date the conversion of Iceland), but what we always tend to find is that even poetry which is composed late substantially comports with what we know of Norse paganism via earlier poems.
The Runatal section for instance, where Odin hangs himself to discover the runes, is strikingly similar to Odin entering a trance after being tortured in Grimnismal, a poem that was composed 300 years earlier.
So quite frankly neither the late composition of some poems and recordation of all of them gives me reason to question their authenticity, and I think the people who do attack the authenticity of the poetic edda are either arguing from ignorance or bad faith
