The Germans play the attrition Jewish game the Brits are used to do this time. By the time they enter Stalingrad, there'll be nobody left to defend the city because much of the Soviet forces would have been crippled in East Prussia, Lithuania and Poland and supply lines destroyed.
that just gives the USSR military time to massively reorganize like they were doing before the invasion, thus not only would they be fully recovered from the purge, but now its a Soviet Union that didn't recieve a massive initial blow along with their industrial heart being unaffected, that and you would have to deal with AA and their own air force which they can and will attrition you, along with bong air campaign
