The pros of Judaism are very clear: you become a part of the most influential (god-chosen) tribe in the world and you educate yourself in their ways to govern lesser peoples, very rewarding and pragmatic.
But what about Islam? You do the rites, do the fasts, pay the tithes etc. and what do you get in exchange? I can't see anything, really.

This is true in the sense that you're joining the legacy of the Natufians, but you're joining that anyways with Islam (Arabs split off from the Natufians 15000 years ago)
Jews are not the most influential part of that tribe, though.

Yes, YHWH started life as the tutelary deity of the Israelites, who were but one subculture of Canaanites.
Ugarit wasn't really Canaanite, but they were very closely related. This myth is shared by all Canaanites.
As part of a political spat with Sidonians some time after the Bronze Age Collapse, the Hebrews rewrote their scriptures in many ways, tearing out large swaths of the canon. One of the things they did is replace בַּעַל with יהוה, and they also threw in the "we wuz led astray!" and Jezebel narratives.
