Because organized religion is as the word says organized. The societies of antiquity could be more urbanized in some ways than the Middle Ages and there were economies were larger trading networks. The Middle Ages were much more reliant on agriculture as the backbone of society than antiquity, in which there were also growing populations and a rapid increase in agricultural productivity (so you need more kids to grow more food to feed more people in a loop). So there we go with the rise of the Abrahamic religions which reflected life in farming villages with Jesus as the "good shepherd" and a liturgical calendar aligned with agricultural cycles and monasteries often becoming centers of rural life. There are sacraments of food and all kinds of Christian themes that revolve around it.But then we have the industrial revolution and urbanization again so we're becoming more "Roman" once again. Well, it's not the same. But urbanization and modernization has freed people up to live more autonomous sexual lives. But as you alluded to, there is still a need for the "family" as a way to transfer and divide property, and gays don't fit into that.
