They would identify as a "Deutschmen" living in some region under the rule over some lord. "Deutsch" comes from the Proto-Germanic word "*þiudiskaz", meaning "that which is of a race, people, ethnicity". This root is used to translate the Greek root "ethno-" in Old English, Old Norse, and Old Saxon. So, they would identify as "a member of the (German) race in X region in service to the feudal lord Y".
