I tried looking for a way but couldn't find one. Maybe I'm not using the correct terms.

I tried this a while ago and couldn't get it to work. You can get the black and white mode by using a color profile, but I could not get two windows with two different color profiles.

Its been a while since I tried it so there may be a solution now.

You can duplicate the canvas and have one be big if you want window>canvas>new window. There is however no way to make one greyscale and the other not if that's what you are after
