I prefer my way, I add a base color below to define the main forms, then I polish/render on a new layer on top of the lines if it's supposed to be realistic/painterly, or I paint in a new layer below the lines and above the bar color, no grisaille, no multiply layers, just directly render things.
Having to rely on a way of digital glazing is not for me.

The biggest pro to workflows like his are that they're very flexible. Not the one in this video specifically, but workflows that make use of gradient maps and masks allow for easy changes to color palette and lighting which is invaluable when having to make quick changes to the mood of your piece.

That's true, it's very flexible, I'm not a professional so I don't have the pressure to change things quickly, and only want to do this as a hobbyist because I love it, so I don't mind it too much, also because I like to do things the hard way to really force myself to learn these things.
Usually I do a small sketch painting figuring out the mood and colors before going for it, usually then I make use of all these adjustments capabilities digital has, until I can figure out how I want something to look.

Depends on how customized you make your gradient maps. Most of the times they're used you don't even notice. The times you do notice it's because the person did a poor job of converting grey scale to more natural colors or literally just used a gradient map and did nothing else then called it a day.
