It looks good, but I cant help but to ponder how those cuts of meat are too big to be eaten with the rest of the food. Chinese cuisine is right with their practice of chopping down all ingredients into bite sized pieces before serving it.

Chinese use chopsticks, they need stuff cut down before serving. European cuisine grants you a fork and a knife you can use to cut to your liking. Doesn't really matter though, in a petit salé the pork is usually quite tender.

Yeah I am aware of that fact. Goes for most of asia as metal was scarce. But purely from a practical purpose I do think having the meat already cut down into mouthful portion during the cooking phase is preferable. One of the most egregious example of dishes not doing this is any sort of food that does pic related. Looks cute in a photo, but if you actually try to eat it you realize you need to pluck out the shrimp and remove the hard bit on the tail with your bare hands in the restaurant. Worse if it is an *entire* fucking shrimp with head and all that some kitchen do.
