The worst job Californian prisoners do is fight fires, but my understanding is that it's actually an in-demand role because it comes with relatively high pay and privileges and so it's fully volunteer. Beyond that, it's all making desks and license plates and shit like that for consumption by the California government or odd jobs involved with the internal upkeep of the prison.
