Sounds fine to me, it's kinda direct, but you kind of have to if you want to be clear about your intentions when someone wants more and are being very forward about it.

They feel about the same to me in that situation, but I personally might use different terms in different situations.
I'd be happy if I won the lottery. It'd be nice if I had some more money
I'd be happy if I could spend more time with my children. It'd be nice if we could hang out again.

It'd be nice is a bit more casual and weaker nuance imo, but it wouldn't bother me if someone uses one or the other. In a business setting I'd probably use something like "ideal" more often. It would be ideal if... ...Does that work for you?

If I'm doing active immersion and grammar and Anki, will I benefit from having Japanese news/podcasts/etc on while not actively trying to pay attention?

I haven't seen it make much of a difference at all, and I've seen other anons share a similar opinion.
In the end, when you can't actively do immersion, I think it shouldn't hurt you, but if you're just going to play a game or something in detriment to active immersion and justify it with listening to a podcast or a vtuber on the side you're just being lazy.

I don’t think it would sound too unnatural, but I would almost never say “I’d be happy” except as a a response to a request.

A: “Could you give me that?”
B: “I’d be happy to.”

Note the “to” at the end. Really, it’s a shortened version of “I’d be happy to do that for you.”

If you write fufuun in romaji, only the strongest otaku will understand unless there's an image acompanying it.
There are some flavors of fufufu that most anime fans are aware of though.
