Anyone else confused by the concept of 'adverbs'?
I'm not referring to a specific language, just in general. I feel like there are so many widely different words that all fall under the category 'adverb' that I don't even know what it means anymore, and reading grammar guides start to feel daunting when that term is brought up.

I always recommend the pokemon games because they really are like graded readers at an A2 or B1 level. Most lines of dialogue are short and simple. Just stay away from any of the trash released after 2010.
I played Gale of Darkness a few months ago in German and had a great time.
Zelda games are great as well, the dialogue is still relatively simple, and you'll see a lot of repeated words like courage, darkness, hero, chosen one, etc. The newer games are fine too, but the dialogue is harder because it has more slang and really casual/weird phrases.
I tried playing a JRPG in German recently but I had to stop, because the dialogue was too advanced for me, and I had to look up words too often.

I do. I use advanced voice mode. Sometimes I have basic conversations with it, like I'll tell it about my day in my TL. Sometimes I ask it to quiz me on stuff and to correct my responses. It does a decent job, but it loses context easily so it starts getting dumber the longer the session goes.

Some other languages will have separate words to denote a comitative use and an instrumental use, both of which are "with" in English. Japanese, for instance, uses と as the comitative form (友達と晩ご飯を食べた, "ate lunch with (a) friend") and で as the instrumental form (e.g. えんぴつで丸を描いた, "drew a cihcle with a pencil"). This would remove some of the ambiguity.

I would say then to just pick 1-2 language families. Intrafamily polyliteracy is dramatically easier than actually being able to speak many languages, each successive language is like half the effort of the previous one in a family. Like do Germanic + Romance, or even just do Latin first and see how you feel about that before branching out (Latin has more to read than each of the individual romance vernaculars and than any of the germanic languages, plus it provides great literacy fundamentals for language learning in the future and makes Romance feel piss easy).

I tried it. It was ok if I put in a prompt for role play. Something like you will role play a man named David. We meeting at a bar. Flesh it out a little more. Sometimes it seems to fall out of the role play and act like ChatGPT normal would. I think Languatalk is better but you have to pay for it.
