So placing the island on the right minimises the chance of an out-of-control plane crashing into the island. Supply ships and oilers then evolved to supply aircraft carriers via starboard side as well, using multiple UNREP stations on their port, because the side with the island was the logical spot to put more plumbing & equipment anyhow. And since then it's been inertia and nobody feeling any need to redesign everything for no reason that caused new carrier designs to keep putting it there.
