I think you might be able to recognize her importance if you see her as the M6 interface to the Apple family.
The Apples were a key part in many memorable episodes, and without applejack there would be no connection with the show.
She performs a very important role, even if you find her boring. AJ is the center of the Venn diagram between the M6 and the Apple family.

They wrote a story about Twilight going to the farm and finding it inefficient in some ways despite being wholly functional and the actual literal solution according to the show was no joke "Just get a bunch of new stuff and stop being so inefficient silly farmers!"

It takes a certain level of stupid to come up with that plot. A certain level of disconnect from how any real world applications may work to follow through with it. A complete and total lack of understanding of stuff actually costing money with long term consequences for taking too much in order to put it to paper, and just the most braindead idiots to ever try writing color horses to make sure it wasn't even an okay episode on its own. They failed at spa hijinks with a country pony, that's just how plain bad they are at everything.

Pretty much any current media has shown that even if you hand these dipshits established characters who have survived literal decades on their characterization and name alone with some of the best stories to understand them, the just plain aren't capable of making it work. This 'Non character' could've been part of some amazing stories if they'd had anyone around who could actually write them instead of nepobabies.

Then she constantly states how the farm is struggling. Something is clearly not working enough for them and its not technology but a refusal to adapt to change. Applejack is just anti-intellectual. Also, like, Winter Wrap Up is a Ponyville wide tradition, not something AJ made up. And we even see AJ learn from her mistakes, that's literally why we got the best letter to Celestia, she didn't learn anything, she was right all along cuz she already learned her lesson. Even in the episode that had her too set in her ways, also had her solve another problem by fixing a damn valve with her tools, thanks to having a fresh outlook to the issue which she learns to apply with her own problems.
