Dragons are pony world mexicans: Originally they were trying to make Spike's catchphrase "Holy Guacamole" and he really loved mustaches, also ponies are afraid of dragons as if they're cartel groups, to the point they have barely any info about them. The only reason it wasn't made more blatant by Lauren In-your-face Faust was probably a mix of her not wanting to make Spike, the closest thing to a male main character AND a legacy character to fall into the stock minority niche and/or Hasbro realizing that, unlike Zecora, who rarely shows up, that would be too much stereotype to handle.
