It would take a lot of coordination to do everything to a click; we'd likely need the drummers to record first and historically it's harder to find people to do drums which would delay the whole project. Then we'd need to make some kind of mix with a chordal instrument so singers could sing in key, etc. Plus we want to capture nuances like tempo drifts/changes anyways.
