how do you write music. i understand the basics of music theory but how do you actually turn any of that knowledge into something original.

This might sound weird, but you have to act as a vessel through which music composes itself. Play a note, a chord, a rhythm, and pay attention to how it makes you feel. Then follow that feeling. Modify the rhythms and pitches until you can crystallize that feeling into a chord progression or melody. Add things. Take things away. Play simple, play complex. You'll start to develop a descriptive vocabulary of sorts of motifs and tendencies that will ultimately become your stylistic fingerprint.

Ie; theory helps you understand what’s already been done and also gives you a shared vocabulary with other musicians that’ll help you to work as a group without just brute forcing everything.
But to do something new you have to strike out on your own.
No, this doesn’t mean you can disregard theory, because if you do so your “something new” is probably just going to be a reinvention of the wheel.

best way I can describe it is that you need to develop your own vocabulary. that doesn't come through theory, it comes from listening to and learning other music. if you learn 30 beatles songs you'll be able to create something kinda like that. same with anything. theory at it's very best can teach you some conventions, but those are just kinda freeze-dried prototype descriptions of the real thing.
