Also easier to play with left-hand muting. I don't think open vs. barre has a huge influence on what other musicians would decide to add to the song

Let alone ringing out chord shapes in different spots. A capo'ed C shape in particular might cater to some fingerstylist trying to get a Celtic type of effect, for example.
