You can play a basic triad (CEG for your C major chord) with only 3 notes or you can repeat notes as you say so for example you could have a C in the bass and another C up an octave, then you can get into extensions outside of your basic triad like the 7th, 9th, 11th, 13th, where you can end up with a lot more than just 3 notes.
