I wouldn't recommend that Chuan C. Chang book for beginners, it makes a bunch of strange claims right off the bat like how it will "accelerate your learning rate, by up to 1,000 times!!", no where in the book will you actually find notation to play along to, its all just a big wall of text.

The Alfred books are much better for actually jumping into playing.

you should but keep practicing if yoiur hands are not huge you have to make it up with speed. Instruments are a big handed game, they benefit more from it but thats ok. You can still maek beautiful music. Or simply cheat and use a recording of the missing notes with the proper timing, with edition everything can be done, some keyboards have that function where you can program the other notes to ring with perfect timing as you do the harder wide chords

something about the DA makes things sound so ethereal. Combining DA with whatever other note works well for some reason, ofc it has incompatible ones, all of them do, especially if you make it sound too crunchy instead of giving the notes a bit more spacing between them.

well the purely muscle memory way would be to practice small parts at a time with the video and then without it. What kind of song is it though? If you don't care about the specific arrangement and know how to harmonize a melody, you really only need to remember the melody and chords.

I'm not sure where advice like curving your fingers as if you're holding a ball comes from, which I've seen before. But I'm guessing it's to help beginners play in C, which is normally taught first and requires your fingers to be a bit more curved than playing in keys with more black keys. The fingers have a natural curve to them in their resting state though, and I don't know anyone who plays while forcing their fingers to be curved as if they're gripping something.
