The problem here is that derailleurs and shifters all look pretty much identical to a casual user, so the idea that more expensive shifting can be useful and easy would have to be taken on faith alone. But "moar gears gud" sells BSOs, so that's how the market is flooded with so much barely functional trash, and if you try to say anything against that it makes you a fred snob who thinks he's lance armstrong

Going that fast on the sidewalk would feel like ass rape due to how bumpy the sidewalk is. That said, still safer than riding in the road with cars, so even if they were doing 30 for some retarded reason I still would prefer cyclist to default to the sidewalk, and I personally default t the sidewalk when I ride, because is extremely safe compared to trying to share the road with trucks, cars, and the like.
