Because everything is trending to be an absolute cheap piece of shit made with the shittiest parts imaginable. It doesn't matter if it's an $80,000 piece of shit or a $10,000 piece of shit. They're all shit made in the same place with the same low-quality parts. Every time these companies fail by making pieces of shit that explode, they get a bailout.

But there's a big difference between an electric piece of shit and a combustion piece of shit. A combustion piece of shit doesn't catch on fire if it's a piece of shit until you put gasoline in it. An electric piece of shit can catch on fire, at any time, even if there's no charge in it. So the electric piece of shit is at risk of catching on fire and burning to nothing literally all of the time while the combustion one, still a piece of shit, at least has sometimes where it is safe to sit and rust like the piece of shit it is.

Going by how often you see something on the news is not a reliable way of judging the frequency of something happening, only the frequency of what some people decided that day was newsworthy. The battery contains all the material involved in releasing its energy. The only thing stopping that from happening is a thing (µm) membrane made of plastic. The layers in the battery will shrink or grow depending on charge state. If the resulting swelling or some inhomogeneous material deposites (dendrites) cause the membrane to be pierced or ruptured a short-circuit can happen.
Once the battery has suffered an internal short-circuit the electrons can flow freely without the involvement of all your external electrics throttling them. The electrochemical reaction will release all its energy in a short time, as heat.
This heat can easily damage adjacent cells. The cycle continues.

The kicker about it is that there's no need to induct any external reaction media (ie. fuel or air). All the fire needs is in there, making it pretty much unstoppable. It also does not need an external ignition source and can start with the EV off just fine. These two points make it considerably more dangerous than fires on ICE-vehicles that develop much slower, can generally be limited or put out reasonably quickly and only happen when the vehicle is in active use (though a hot cat may cause issues for a few more minutes in rare circumstances).
