Say you are about to cross the country South to North (Plymouth-Inverness) in 250 mile per day stretches. Where would you spend those two nights without getting your bike stolen or being mugged/stabbed by cultural enrichers. Camping is preferred but a small B&B in a peaceful town will do as well

250 miles puts you right in the middle of the Peak District, which as well as being lovely is probably your best bet for avoiding undesirables. Buxton is a nice town and big enough that you're likely to find something or there are loads of campsites, take your pick really. You could also ride some of the roads, I recommend the A57 Snake Road and A6024 Woodhead Road. From there you can go north through the Dales if you want, or the M6 isn't far away if you're in a hurry. There's a good bunkhouse/campsite I've stayed at in the North Pennines near Alston but it might not be far enough north for your second night.

Another 250 miles from there puts you about level with Glasgow and Edinburgh. I don't know much about this area of Scotland regarding what towns are decent and which are shitholes, but I've stayed in Dunfermline before and it seemed fine. The clientele of the big Tescos didn't seem too brown and/or dangerous and my bike was still there in the morning as was the Ducati Multistrada parked across from it. It also puts you close to the A9 to go straight up to Inverness or you can take a detour through the Cairngorms. The A93 Old Military Road is a fantastic ride even if the weather's shit.

I know but it's s leisure trip starting in Spain and I want to enjoy your country while I cross it. Also the main goal is the NC 500 so there's no point in starting the route absolutely destroyed

He could head towards Bristol, cross the Severn bridge and ride up through Herefordshire and the Shropshire hills, lovely country roads that way, then he could ride to the outskirts of the peak district, avoiding all motorway.

You can in Scotland, as long as you're not disturbing anything. In England it's not allowed unless you have the permission of the land owner so unless you're stealthy it's best avoided. Although you won't get into any real trouble for it, just an angry farmer kicking you off his land.
Oh also if you're going through the Yorkshire Dales go via Buttertubs Pass too, that's another good one.
The NC500 is incredible, I hope you enjoy it anon! If you find yourself in Applecross consider staying at the campsite there, the owner is lovely and did me a massive favour when I broke down.

Legends. I will stick to Scotland for the camping then. I don't want to be yet another foreigner causing trouble to be honest. B&Bs are good to stay rested until I reach Inverness. I assume in Scotland there's no issue in taking a dip in any lake or river either right?

Only issue is that a lot of our rivers are contaminated with sewage, not sure if Scotland is the same but probably best avoided. As for lochs, go for it. They will of course be freezing cold.

Try to spend some time in Wales. Extremely good roads out there. Aberystwyth is a great place to stay overnight.
