Either chinesium or your intake temperatures are way out of range or you have an electrical problem.

IAT sensors rarely go bad compared to every other sensor. The only thing I can think of that is less likely to go bad is a knock sensor.

Could mean that the new one is a piece of shit or that neither are the problem and it's a bad connection/trace somewhere.

Probably simplest to throw another one at it and if the problem doesn't repeat then it was just a pos part. If it does repeat soon then you'll need a better-than-average mechanic who doesn't just throw parts at things to find it.
