What exactly happens in Northern Quebec? there's like 2 roads that get you roughly half way up and they are surrounded by a million small lakes it seems.

Nothing really. Its arctic taiga and hills. Same as anywhere else this far north.
The Canadian shield has traditionally been traversed by canoe and fishing. Lots of portages and long lakes.
I'd say north to south would take you about 8-12 weeks.
